A Quick and Easy Side Dish Made with Masa Harina and Einkorn

This easy-to-make dish tastes like cornbread but has more flavor, more nutrients, and is a whole lot easier to digest.
Pair it with honey or maple syrup on top of a bowl of chili, or a southwestern bowl, and you have the perfect meal.
What is Masa Harina?

Masa Harina translates to ‘dough flour’. The star of this healthy side dish is, of course, the corn flour prepared using an ancient technique called ‘nixtamalization’.
The corn kernels used to make the dough flour have been nixtamalized, meaning the kernels were cooked, then soaked in lime water (also known as calcium hydroxide).
This soaking removes the outer indigestible hull of the corn, and then it is ground into flour or masa. Traditionally, this is how corn tortillas are made.
Removing the hull enables our bodies to access and absorb the full nutrients that corn offers.
Einkorn

Not only is masa harina more digestible, but einkorn is also doing wonders for your digestion in this dish.
Einkorn is the only wheat to have never been hybridized. The wheat head is smaller, and the husk prevents fungus from growing on the wheat.

A Quick and Easy Masa Harina & Einkorn Cornbread Recipe From Scratch: Ingredients
Pairing these two flours will yield the most intense corn-flavored, nutty, and digestible cornbread.
All you need is
- Butter- adds fat and flavor
- Masa Harina- intense corn flavor that gives life to this cornbread
- AP or whole wheat Einkorn Flour- adds a nutty stabilization to the cornbread
- Baking Powder- gives it a little rise
- Salt- you can’t go wrong with salt
- Whole Milk- adds moisture and tenderness
- Maple Syrup- sweetener
- Eggs- the combining force that adds protein
A Quick and Easy Masa Harina & Einkorn Cornbread Recipe From Scratch: Instructions
Preheat Oven to 425º F and place a 9×9 dish with butter in it in the oven for it to melt

In a medium bowl, combine the dry ingredients

In a 2-cup measuring Pyrex, measure maple syrup, then add the milk and eggs. Whisk until smooth.

Take the melted butter out of the oven, and gradually pour it into the milk mixture, leaving a couple of tbsp of butter on the bottom of the dish
Add the wet ingredients to the medium bowl of dry ingredients and whisk until the flour is combined

Pour the batter into the prepared and buttered dish using a spatula or fork to press it down and smooth it out

Bake for 20-25 minutes or until ready. Use a butter knife to test the middle and see if it is done
Serve it hot with honey and a big slab of butter!

- 1 1/2 cups Masa Harina
- 1/2 cup AP Einkorn flour or 1/3 cup whole wheat Einkorn Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Salt
- 1 1/3 cups Whole Milk
- 1/4 Maple Syrup
- 2 Eggs
Instructions
