What can be easier than these s’mores bars? When my husband brought home these delicious graham crackers made with super clean ingredients, I started getting my wheels turning. I instantly craved marshmallows and chocolate to make s’mores.
However, I didn’t want to wait for a campfire to be built, so I took the initiative to create a s’mores dip. But it was a bit messy and not very pretty, which brings me to this recipe. It is delicious, easy, yet beautiful to eat!
Easy Graham Cracker Crust

If you want a quick and easy graham cracker to make the crust with, these are the best store-bought graham crackers. They are made with organic whole wheat flour, organic cane sugar, milk, butter, coconut oil, organic honey, cinnamon, vanilla, baking powder, baking soda, and salt. The ingredients can’t get better than that!
The perfect crust comes together nicely with melted butter with a little sugar on top of crushed graham crackers. Compactly place that on the bottom of the pan for a base layer to the s’mores bars.
This is a super easy crust for a special cheesecake if you are up for that!
Easy Homemade Marshmallows

Since homemade marshmallows are easy to make, I whipped some up—literally! I have my recipe here that you can use. Personally, the star of a good s’more is homemade marshmallows. They are way better than store-bought. Plus, they are made without corn syrup and all the yucky ingredients. These marshmallows are fluffier and healthier for you because of the gelatin.
Easy Homemade Ganache

If you have chocolate and heavy cream, you have ganache. These two ingredients come together nicely. To have a healthy alternative ganache, make sure your chocolate is soy-free. Better yet, if you have difficulty digesting dairy, make sure your cream is A2, which is easily digestible.
The chocolate should be semi-sweet. You can chop up a chocolate bar or use semi-sweet real chocolate chips. Melt them down together with the heavy cream. It takes just a few minutes but here is a great reference for making chocolate ganache.

Once you have all your ingredients ready to go, put everything together. It is as simple as 1, 2, & 3! You will have a quick and delicious treat for any holiday event or gathering without the need for a campfire.
Once ready to make the recipe, make the graham cracker crust and pop it in the oven to bake a bit. Let this completely cool before making the marshmallows. This crust comes together in about 5 minutes and tastes so good!
Next, make your marshmallows and pour the fluff onto the crust. Finally, make your ganache and spread it across the marshmallows. I like my marshmallows melted a little bit so if you want that gooey s’mores bar everyone loves, let the hot ganache melt the marshmallows a bit.
Otherwise, spread the ganache on the marshmallows and place them back in the fridge to set up and firm up.

Ingredients
Ganache
- 5 ounces dark chocolate
- 1/4 cup cream
Marshmallows
Crust
- 1/2 cup melted butter
- 1 1/2 cups graham cracker crumbs (finely crushed)
Instructions
- Preheat oven to 350° F
- Make the graham cracker crust by crushing the crackers finely in a small bowl.
- Combine melted butter and sugar in a separate bowl, then pour this over the crust.
- Mix with a fork until it comes together
- Pour the crust mixture into a lined 8x8 pan with parchment paper
- Compact the crust firmly into the pan
- Bake the crust for 5-10 minutes until golden brown
- Next, make your marshmallows and pour the fluff onto the crust.
- Place the dish in the fridge for up to 8 hours or overnight so the marshmallows set
- Once the marshmallows are ready, make your ganache by melting the chocolate and cream in a small dish over medium heat
- Mix until it is glossy and melted; don't let it boil
- Spread the ganache across the marshmallows
- Place in the fridge to firm up, and cut the bars into squares
Notes
I like my marshmallows melted a little bit so if you want that gooey s'mores bar everyone loves, let the hot ganache melt the marshmallows a bit.
