- 2 1/4 cup water (divided)
- 1 cup sugar
- 40g gelatin
- 1 tsp vanilla
Instructions
- Pour 1 1/4 cups water into the bowl of a stand mixer, then sprinkle the gelatin over the water. Wait 5 min until it blooms/thickens.
- Pour 1 cup water into a small pot and place over high heat
- Add sugar to the boiling water and mix until it is completely dissolved
- Pour hot sugar water over the gelatin mixture
- Whip on high speed for 5-10 min until fluffy
- *add vanilla into the bowl while the marshmallows are forming
Notes
If you want to replace the sugar, use 140 g maple syrup and slightly boil over high heat. Don't add the 1 cup water.
