Admittedly, I goofed up on the vanilla measurements and added 3 Tablespoons vs 3 Teaspoons, but it was a happy accident that didn’t ruin anything. This happy accident made the cake even better because it was so deep with vanilla notes. I added a little extra salt to make it subtle, and extra coconut extract to help keep the theme of it being a coconut cake.

- 2 cups sugar
- 1 teaspoon baking soda
- 1/2 teaspoon Salt
- 3.5 oz coconut milk
- 1/2 cup butter
- 1 cup whole milk
- 2 eggs
- 3 teaspoons Casa Bella Vida Mexican Vanilla
- 5 teaspoons coconut extract
- FROSTING:
- 1/2 cup butter
- 1/2 cup cream
- pinch of salt
- 3 teaspoons Casa Bella Vida Mexican Vanilla
- 4 teaspoon coconut extract
- 4 cups powdered sugar
- 3 cups unsweetened flaked coconut
